Potato Cakes (makes six)

It can be a total chore to eat yesterday’s leftovers, but don’t reach for microwave noodles just yet – with a little revamp leftovers can be tres tasty. Just follow these simple steps.

  1. Take 700g of cooked potato, 1 tablespoon of chopped parsley, a handful of grated cheese, one whisked egg and 150g of chopped ham. Mix ‘em all together.
  2. Season with a dash of black pepper.
  3. Divide the mixture into six pattie shapes and pop ‘em in the fridge for the length of an episode of 90210 (or an hour).
  4. Next melt a knob of butter in a pan and place the potato cake patties on the pan. Flip and cook until golden brown on either side.
  5. Serve with leafy salad and mayo mixed with mint sprigs and lemon juice.

Remember! It’s important they’re properly heated, so ask your folks if you’re unsure or pop the batch in the oven for a bit.

Top tip! This recipe is versatile so add or substitute your fave food stuffs to create a totally unique creation. Did someone say extra cheese? Om.
